Vanilla Cake with Raspberry Sauce

  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon white vinegar
  • 2 teaspoons vanilla extract
  • 1/4 cup vegetable oil
  • 1 cup water
  • raspberries
  • sugar

Preheat oven to 350°F.  Grease an 8″ square baking pan.  Stir together the flour, sugar, baking soda, and salt in a medium sized mixing bowl; set aside.  In another bowl, combine the water, vegetable oil, vanilla, and vinegar.  Pour the liquid mixture into the dry mixture and quickly stir.  Then pour the batter into the baking pan.  Bake for 35 minutes.  While the cake is baking, put the raspberries in a medium saucepan.  Pour some sugar in the pan also and mash the raspberries.  Bring to a boil on medium-high and boil until beginning to thicken.  Taste and add more sugar, if desired.  Continue to boil until desired thickness.  Serve the raspberry sauce over the cake and enjoy!
