Chocolate Banana Muffins with Peanut Butter Chips

 

Last week I had some really ripe bananas that badly needed to be used.  Instead of making plain banana bread, I wanted to try something different.  So, of course, I looked on Pinterest for some recipe ideas using bananas.  Seeing the many recipes for chocolate banana bread gave me an idea, so instead of making bread, I came up with a recipe for chocolate banana muffins.  While I was making them, I realized I had some peanut butter chips that needed to be used also, so I added them also.  Turns out chocolate, banana, and peanut butter is the perfect combination! These muffins are so delicious!

Chocolate Banana Muffins with Peanut Butter Chips

Makes 1 dozen muffins

  • 1 cup all-purpose flour
  • 1/2 cup cocoa
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 cup brown sugar
  • 3 small bananas, mashed
  • 1 teaspoon vanilla
  • 1/4 cup butter, melted
  • 1/4 cup vegetable oil
  • 1 large egg
  • 3/4 cup peanut butter chips

Preheat the oven to 350°F.  Grease a muffin pan and set aside.  In a mixing bowl, stir together flour, cocoa, salt, baking soda, and baking powder.  Then in another bowl, mash the bananas and beat in the egg.  Then add the sugar, butter, oil, and vanilla to the banana mixture; stir well.  Pour the wet mixture into the dry and quickly stir; then fold in the peanut butter chips.  Divide mixture evenly between 12 muffin cups.  Bake for 30 minutes or until a toothpick comes out clean.  Let cool slightly before serving.  Enjoy!
